Many people will talk about cast iron being the reigning champ of all cookware. While it’s true that this time honored cooking vessel is truly a powerhouse in the kitchen and has been for centuries, it’s not ideal in every situation. When using cast iron, metal will retain heat long after its been removed from the heat source. Now this can be desirable in a lot of situations, it’s not always what exactly what you need.
Sometimes you need to exhibit more control over your temperatures and this is where copper comes in. With copper cookware, you can fine-tune your temperatures very quickly and it responds very well to increases or decreases offering greater command over the cooking.
Where copper also rises above the completion is in its ability spread heat evenly over the entire width of the pan. Qualities to Look For in Copper Cookware
When it comes to cookware, not all sets are created equal. In general, when shopping for your pots and pans, the thicker they are the better. Julia Child has been quoted as saying in Mastering The Art of French Cooking that to get all of the advantages of copper it “must” be 1 eighth of an inch thick and who are we to argue with that? When cookware is too thin it means that the manufacturer has cut corners in terms of quality during the production and your cooking will suffer as a result. But remember, just like with cast iron, a thicker metal means better heat retention but less heat response. The sweet spot for the best of both worlds seems to be right in the 2.5mm range.
Looks: Smooth or Hammered
A long time ago, a hammered piece of copper meant that you could be assured that the piece was crafted by hand and was of a high quality. However, in modern day, both hammered and smooth copper is made with machines, so it really comes down to personal preference and aesthetic. The hammered definitely gives a more rustic, French country cottage or farmhouse feel while the smooth copper is more sleek and modern. Honestly, we like both depending on the maker so in the end it’s really up to you.
Lining: Tin or Stainless Lining
The cookware in this guide comes in tow configurations: tin-lined and stainless-steel-lined. Some copper is made with a bare lining but this is rarely practical and in some instances can even be dangerous to your health by exposing you to too much copper. The bare lining has an extreme reactivity to acids in foods, is the most expensive and is only favored for very specific tasks like whipping eggs. So for these reasons we don’t really recommend it.
Because of the health concerns, copper has been lined with tin for a long time. Outside of increasing the safety of cooking with copper, it in no way interferes with all of the things that make copper so great like its responsiveness to varying temperatures. Tin is also naturally non-stick and in small amounts is essential for the body. One thing to be careful of with tin is that over time the layer will wear thin. The time is takes for this to happen can be extended with proper care, but sooner or later it will occur. For a home cook, this only needs to be addressed every 15-30 years and can be done locally with a craftsman in your area.
Like tin, stainless lined cookware sets will not effect how great copper is at controlling and distributing heat throughout the surface of the vessel. Unlike tin, stainless lined pots and pans will not develop that natural tarnish over time and they are easy to clean and maintain. It is a very tough lining and can take a beating before you will start to see any kind of wear and tear.
One thing to be aware of is that the stainless lining does not possess the non-stick properties of tin. On a base level it is a very different metal and food will become stuck to it easier. Some people also feel that the stainless steel imparts a flavor into the food but this is more anecdotal and I have never in all my years of cooking found this to be true.
